Start with a 1 lb package Buffalo Groves Ground Bison Meat.
Combine ingredients below (don't add meat), cook in a skillet until onions are clear:
1/2 small red onion (chopped)
1 tbsp red pepper flakes
1 tbsp ground garlic (or garlic to taste)
1 roma tomato diced
1/8 cup Worchester sauce
1 tbsp olive oil
Then add buffalo meat and cook until meat is all browned.
Sear Hatch peppers (bbq, torch or?) but do not burn the skin.
Slice one side of the pepper and remove seads, then stuff with buffalo mixture.
Once all stuffed, cover peppers with a little tomato sauce, then your favorite cheese.
Bake in 350 oven, until internal pepper temperature reached 140 degrees, then let stand a few minutes before serving.
NOTE: You can also freeze peppers (before cooking) for cooking at a later date.
