Start with a 1 lb package Buffalo Groves Ground Bison Meat.

Grab a big mixing bowl... Add the Ground Buffalo Meat, 1/4 cup of chopped onion, a dash of nutmeg, cinnamon and ginger, 1 tbsp of olive oil, 1 slightly beaten egg, and 1/2 cup of Apricot Sauce which we get from Aspen Leaf Gourmet. Mix everything up well, and then mix in about 1/2 cup of bread crumbs; and again mix well (it's really best to use your hands).

Get a small loaf pan, make sure to spray it with non-stick or olive oil. add 1/2 of the mixture to the pan and create a pocket in it as best you can.

Add 2/3 cup of dried fruit in the pocket. (Especially great with Apricots, Pineapples, and even some nuts.) Then add the other 1/2 of the meat mixture on top, then top with perhaps 2 tbsp of Apricot Sauce.

Bake in 350 oven for 30-45 minutes. FYI: Terrine is just a fancy word for Meatloaf.
