Buffalo Heart
A Great Bison Meat Recipe

Start with a Buffalo Groves ~ Buffalo Heart (prox 3 lbs).

1) Wash the heart, and trim any fat or gristle.
2) Soak the heart, in cold water (grandma's soaked it in cold milk)
3) Prepare some stuffing, a box mix will work... (grandma's styuffing always had diced onions, celery, sage seasoings, sometimes even a diced apple).

Opt A: Create a cavity in the Heart and stuff it with stuffing. Cook in the oven on 300 for 60-90 minutes. Serve with gravy.
Opt B: Slice Heart, layer a casserole dish with heart slices, then stuffing, etc. Cook in the oven on 300 for 60-90 minutes. Serve with gravy.
Opt C: Slice Heart, layer heart slices and stuffing in a Crock Pot and cook on Low for 6 hrs. Serve with gravy.


TRY BUFFALO HEART KABOBS: Cut chunks of Buffalo Heart, then marinate, then cook as you would other Kabobs.
